In short, the in-season competition for Texas was stronger than that of Utah.  Give Utah the same schedule that Texas had, and they would have been 7-5 (or worse), too.

A lot of games in the East don't kickoff until 7:30, 8, 8:30 or even 9PM and subsequently don't end until late - sometimes after midnight.

I’m going with the belief that Utah gave zero f*cks about the Alamo Bowl after Oregon manhandled them to keep them out of either the playoffs or the Rose Bowl, and also it was basically a home game for Texas.  One of the easier picks of the bowl season.
